We were in Arizona visiting family for a few days over the weekend, and got back Tuesday night. So we’re back to cooking, although our kitchen renovation is making it a little tricky to cook normally, but we’re doing our best!
Here’s a quick review of our weekly dinners:Â
Wednesday:Â Potato Leek Soup
Our kitchen renovation started this week, so I’m trying to make simple meals that I can make out of our basement kitchen that doesn’t have a stove or an oven. This was an easy recipe that was delicious!
Thursday: Sausage and Pepper Pasta
We do have a hot plate that can be used to cook pasta, so I made this recipe using the instant pot and then cooked the pasta on the stove. Simple and flavorful and healthy!
Friday:Â BBQ Chicken Pizza
We don’t have an oven, but we do have a toaster oven, so we made mini pizzas and they turned out pretty good for a toaster oven! I looked up instructions for this and it recommended 400 degrees F for 8-10 minutes and that worked for us!
Saturday: Family Date Night
Sunday:Â Red Beans and Rice and Corn Muffins
This is one of our favorite slow cooker recipes — it cooks all day and is so flavorful and delicious. I served over white rice and cooked up some corn muffins in the toaster oven using Famous Dave’s Original Cornbread mix.
